Challenge
Goodfish identified an innovation opportunity in the protein snacking category and tasked CCD Innovation to develop a breakthrough shelf-stable snack that utilizes the protein-rich, wild-caught Alaskan salmon from Bristol Bay–one of the most sustainable fisheries in the world.
Approach
We started by immersing our team in the benefits and sensorial attributes of Alaskan salmon. The CCDI product development team dove into a product exploration to identify potential forms, textures and flavors of a salmon-based, shelf-stable snack. After a thorough investigation, the Goodfish and CCDI teams identified that marine collagen-rich salmon skin, provides a unique and exciting opportunity in creating a protein-rich, crunchy and craveable snack for the US market. After identifying the best process to create a shelf-stable* product that features a thin, light and crispy texture, CCDI utilized our internal trend insights and cross-functional teams to develop four boldly flavored prototypes: Sea Salt, Spicy BBQ, Chili Lime and Tart Cranberry.
After developing the initial prototypes, we conducted an international co-man search and translated the benchtop formula to a manufacturing environment and performed multiple trial runs to fine-tune the commercial process.
Results
Our expertise helped Goodfish bring a sustainable, healthy and delicious snacking opportunity to the US market.
